Tuna Pattycakes Recipe
My husband never liked tuna patties, so I developed a buttermilk version that he loves!

Ingredients
  • Olive oil
  • 6oz can tuna in water, undrained
  • 1 egg, lightly beaten
  • Scant 1/2 tsp dill leaves or to taste
  • 2/3 cup self-rising flour
  • Pinch baking soda
  • 1/3 cup buttermilk

Directions
  1. Heat oil in pancake griddle over medium heat.
  2. Combine tuna with egg and dill.
  3. Sift together flour and soda; add to tuna mixture.
  4. Add buttermilk.
  5. Dip batter out onto griddle to form thin rounds 3-4" across.
  6. When one side is golden, flip over to brown other side and cook through.
  7. Repeat until all batter has been used.
  8. We burn our fingers and mouths eating these immediately, but they would probably make a good accompaniment to brunch or salad. Or you can just eat them with ketchup, like my husband does!
