Tuna Pattycakes

- olive oil shopping list
- 6oz can tuna in water, undrained shopping list
- 1 egg, lightly beaten shopping list
- 1/2 tsp dill leaves or to taste shopping list
- 2/3 cup self-rising flour shopping list
- Pinch baking soda, opt. shopping list
- 1/3 cup buttermilk shopping list
How to make it
- Combine tuna with egg and dill.
- Sift together flour and soda; add to tuna mixture.
- Add buttermilk. Batter will be fairly stiff.
- Begin to heat generous amount of oil in griddle, but only to medium or less.
- Dip batter out onto griddle to form thin rounds 2-3" across.
- Cook slowly.
- When one side is golden, flip over to brown other side and cook through, adding oil if needed.
- Repeat until all batter has been used.
- We burn our fingers and mouths eating these immediately, but they would probably make a good accompaniment to brunch or salad. Or you can just eat them with ketchup, like my husband does!
