How to make it

  • Combine tuna with egg and dill.
  • Sift together flour and soda; add to tuna mixture.
  • Add buttermilk. Batter will be fairly stiff.
  • Begin to heat generous amount of oil in griddle, but only to medium or less.
  • Dip batter out onto griddle to form thin rounds 2-3" across.
  • Cook slowly.
  • When one side is golden, flip over to brown other side and cook through, adding oil if needed.
  • Repeat until all batter has been used.
  • We burn our fingers and mouths eating these immediately, but they would probably make a good accompaniment to brunch or salad. Or you can just eat them with ketchup, like my husband does!
