Sole Matanzas Recipe
SOLE MATANZAS This recipe came from an estate sale. I obtained it when I purchased the family collection from the Kershaw Estate in Crandall, Texas in 1984.

Ingredients
  • 6 sole fillets
  • 2 beaten eggs
  • 4 ounces crabmeat
  • 1/4 cup softened butter
  • 1 tablespoon lemon juice
  • 1 tablespoon oil
  • 1/8 teaspoon hot pepper sauce
  • 1/8 teaspoon salt

Directions
  1. Add lemon juice, pepper sauce and salt to softened butter and whip until smooth.
  2. Add oil to a sauté pan and bring to medium high heat.
  3. Dip each fillet in egg and sauté for 2 minutes on each side.
  4. Place fillet on plate and top with 1 ounce crabmeat and a dollop of lemon butter sauce.
  5. Place under broiler for 1 minute then serve immediately.
