How to make it

  • In a pan, cook bacon until crispy, add onion and garlic near the end so that the onion is caramelized and the garlic isn't cooked very much. Drain excess bacon fat.
  • In a pot boil potatoes until tender, then drain off the water.
  • Add cooked bacon and onions to pot of potatoes.
  • Add enough milk to cover the potatoes well. Add dill, salt, and pepper. Bring to a gentle simmer.
  • Add corn starch to achieve your desired thickness.
  • Let sit 5 minutes before serving.
