Creamy Potato And Bacon Soup

- 500g thick sliced bacon (sliced along the width to 1/2") shopping list
- 3-4 medium-sized red potatoes (diced to 1/2", do not peel) shopping list
- 1 small onion (diced to 1/2") shopping list
- About 750 mL milk (you can use anything from skim to whole) shopping list
- 4 cloves garlic (crushed or minced) OPTIONAL shopping list
- 1 tsp dill weed shopping list
- 1/2 tsp ground black pepper shopping list
- 1/2 tsp sea salt (or regular salt) OPTIONAL shopping list
- corn starch shopping list
How to make it
- In a pan, cook bacon until crispy, add onion and garlic near the end so that the onion is caramelized and the garlic isn't cooked very much. Drain excess bacon fat.
- In a pot boil potatoes until tender, then drain off the water.
- Add cooked bacon and onions to pot of potatoes.
- Add enough milk to cover the potatoes well. Add dill, salt, and pepper. Bring to a gentle simmer.
- Add corn starch to achieve your desired thickness.
- Let sit 5 minutes before serving.
