How to make it

  • Season birds inside and out with salt and pepper.
  • Fill cavities with celery,lemon slice,onion slice,apple and garlic.
  • Tuss both birds.
  • Place bacon slices over birds.
  • Roast uncovered in a 350 degree oven for 20 minutes (or) until tender.
  • Remove bacon slices before birds are done to brown evenly.
  • Place pheasants on heated platter and keep warm.
  • Pour off fat from roaster,add chicken broth and stir over medium heat,scraping up browned bits.
  • Cook liquid down half,and add apricot jam,lemon zest.
  • Simmer for about 5 minutes.
  • Serve with birds.
