Ingredients
  • 2 Pheasants
  • Salt and Pepper
  • 1 Cup Celery Leaves
  • 2 Lemon Slices
  • 2 Thick Onion Slices
  • 2 Small Apples,halved
  • 2 Cloves Garlic
  • 6 Bacon Strips
  • 2 Cups Chicken Broth
  • 1-1/2 Cups Apricot Jam
  • 1 teaspoon Lemon Zest

Directions
  1. Season birds inside and out with salt and pepper.
  2. Fill cavities with celery,lemon slice,onion slice,apple and garlic.
  3. Tuss both birds.
  4. Place bacon slices over birds.
  5. Roast uncovered in a 350 degree oven for 20 minutes (or) until tender.
  6. Remove bacon slices before birds are done to brown evenly.
  7. Place pheasants on heated platter and keep warm.
  8. Pour off fat from roaster,add chicken broth and stir over medium heat,scraping up browned bits.
  9. Cook liquid down half,and add apricot jam,lemon zest.
  10. Simmer for about 5 minutes.
  11. ~Serve with birds~

We don't have pheasants down in this neck of the state.. We do have those not sure if this is the right name... Chuck a lot... like a small pheasant? They are roosting in the empty lot next door! Can you do this with Dove?
