How to make it

  • Rinse fish and pat dry with a paper towel.
  • Drizzle fish on both sides w. olive oil and salt and pepper.
  • Cook in a hot pan until fish is browned on both sides and cooked through.
  • Take fish from pan and keep covered.
  • In same pan, add more olive oil and saute onions until soft, about 5 minutes.
  • Crush and tear tomatoes as you add them to the pan.
  • Tear and pit olives and add them to the pan.
  • Saute until tomatoes soften, adding water little by little as you go to deglaze the pan and create a sauce. As liquid reduces keep adding a little more water.
  • Add capers and incorporate.
  • Spoon warm rice onto a plate or big bistro bowl.
  • Place fish on top and pour sauce over.
  • YUM!..
