How to make it

  • Drain liquid off chick peas
  • Dice 1/2 inch-sausage peppers and sweet onion
  • Slice green onion and garlic
  • Heat a large deep skillet on medium heat for about 2-3 minutes, then add the oil.
  • Add the onion and a pinch of salt.
  • Saute the onion til almost clear and add the sausage.
  • Sausage is likely pre cooked heat for 5 min and add green onion
  • garlic and first can of chick peas. Heat for another 5 to 7 minutes.
  • Add bell peppers vegetable stock liquid smoke and cayenne.
  • Reduce heat and simmer till stock is reduced 10 to 15 minutes.
  • Add last can of chick peas and ground pepper heat 5-7 minutes.
  • Second can of chick peas provides a variation of texture.
  • Serve
