LEMON HERB SALMON This recipe came from an estate sale. I obtained it when I purchased the family collection from the Cashion Estate in Terrell, Texas in 1996.

Ingredients
  • 6 tablespoons extra virgin olive oil
  • 2 tablespoons fresh lemon juice
  • 2 teaspoons minced fresh lemon zest
  • 1-1/2 teaspoons finely minced fresh rosemary
  • 1-1/2 teaspoons minced fresh basil
  • 1 tablespoon minced fresh parsley
  • 1/8 teaspoon crushed red pepper flakes
  • 1/2 teaspoon minced fresh garlic
  • 1/4 teaspoon salt
  • 6 fresh thick cut salmon fillets

Directions
  1. Mix all ingredients except fish and set aside.
  2. Preheat oven to 450 then season fish with salt and pepper.
  3. Heat 1 tablespoon olive oil in a large heavy skillet over moderately high heat.
  4. Add fish and cook until golden brown about 4 minute then turn and cook 2 minutes more.
  5. Place skillet with fish in preheated oven and roast fish 5 minutes.
  6. Place fish on plates and splash each piece with 1 tablespoon or more of the lemon splash.
