DILLY PEAS This recipe came from an estate sale. I obtained it when I purchased the family collection from the Cashion Estate in Terrell, Texas in 1996.

Ingredients
  • 5 pound fresh peas
  • 4 scallions
  • 1-1/4 cups oil
  • 1-1/2 pounds fresh tomatoes peeled
  • 3 tablespoons chopped dill
  • 1/2 teaspoon salt
  • 1 teaspoon freshly ground black pepper

Directions
  1. Shell wash and drain peas then chop white part of the scallions into small pieces.
  2. Chop green part of scallions into large pieces then heat oil in large pot.
  3. Add scallions and cook until soft but not browned.
  4. Add peas and brown very lightly then add tomatoes, dill, salt and pepper.
  5. Add enough water to half cover the peas then cover pot.
  6. Cook over medium heat for 45 minutes.
