Dads French Canadian Baked Beans Recipe
This dish is a unique baked bean recipe handed down for 200 plus years from the French-Canadian side of my family. Takes a little time, but worth it.

Ingredients
  • 12 ounces dry Great Northern Beans
  • 2 ozs salt pork
  • 1 medium onion
  • garlic
  • bay leaf
  • commercial mustard
  • salt
  • pepper

Directions
  1. Soak 12 ozs of Great Northern Beans in water overnight or 8 hours.
  2. Deain beans, preserving 1 cup of water.
  3. Heat oven to 325
  4. Layer beans in baking pot with the following ingrediants:
  5. one medium onion sliced thin
  6. 2 inch chunk of salt pork
  7. 1 large bay leaf
  8. 2 cloves of garlic pressed or diced
  9. 1/2 tsp salt
  10. 1/4 tsp black or white pepper
  11. 1Tbspn mustard - your choice
  12. Stir gently
  13. Place in oven
  14. Cover leaving making sure to leave an 1/2" opening in bean pot. lid and bake at 325 for three hours, adding reserved water as needed. (Beans should not be allowed to become dry.)
  15. Serve with apple cider vinegar dribbled over.
  16. Great refrigerated and served the next day.
