Cauliflower And Scallions Recipe
CAULIFLOWER AND SCALLIONS This recipe came from an estate sale. I obtained it when I purchased the family collection from the McNabb Estate in Bedford, Texas in 1981.

Ingredients
  • 1 small head cauliflower
  • 2 bunches scallions
  • 3 tablespoons canola oil
  • 1/2 teaspoon mustard seeds
  • 1/2 teaspoon turmeric
  • 2 jalapeƱo peppers
  • 1/3 cup hot water

Directions
  1. Wash and drain cauliflower then separate into small florets.
  2. Trim scallions and chop into 1/4" pieces.
  3. Heat oil and when it is very hot add mustard seeds and stir constantly for 1 minute.
  4. Add turmeric, jalapenos, salt and scallions stirring rapidly.
  5. Cook for 1 minute then add cauliflower and stir to mix everything well.
  6. Add water and simmer covered for 20 minutes then increase heat to evaporate any liquid.

Alterations


Might swap the jalapenos for birds eye chillies. This recipe's got Indian roots and would work well with floury potato substituted for some cauliflower.

Remember to add only enough water to help steam it - don't cover the collie with water!!
