How to make it

  • rinse chicken
  • place in crockpot/slowcooker
  • add Goya seasoning
  • add water to half-way up the chicken
  • let cook until done (about 6-8 hours)
  • take chicken out of pot/cooker
  • shred
  • place in pan
  • add mexican seasoning
  • add 1/3 cup water (if you want it juicier add a touch more)
  • mix together and let simmer for about 5-6 minutes
  • while waiting
  • (if doing refired beans - from can - heat while chicken is simmering)
  • cut up tomato - place in bowl
  • lettuce - place in bowl
  • open cheese - place in bowl
  • open sour cream
  • open salsa
  • heat shells in microwave (follow directions on package - <hard shells may take longer - check packaging>) you can fry the soft shells in olive oil - I prefer mine heated and soft
  • put shell on plate and fill with your favorite veggies, chicken, beans, sour cream and salsa.
  • ENJOY! - They can be very messy - bib recommended...lol

    Twice-cooked chicken for a taco/burrito seems to be a solid start for a Mex feed, but you lost me with "mexican flavoured cheese", and then using your favourite commercial salsa after going to all that effort for the chicken seems to be a skimp.
