How to make it

  • Thinly slice the onions and saute in a frying pan for five minutes until transparent.
  • chop the garlic and add to the onions
  • Thinly slice the potatoes and mix into the onion and garlic
  • season well and cover for 30 minutes, give the potatoes a bit of a stir every five minutes to ensure even cooking.
  • Roast the cherry tomatoes in a little olive oil
  • Add the oregano to the potatoes five minutes before the end
  • Slice the taleggio and layer into the potatoes when they are cooked through
  • serve with the roast cherry tomatoes and a side of brocolli
