Slow Fried Potatoes Recipe
A really comforting and satisfyng potato dish that goes well with brocolli.

Ingredients
  • 1 kg potatoes
  • 1 large onion
  • 4 cloves of garlic
  • fresh oregano
  • taleggio cheese
  • cherry tomatoes
  • olive oil

Directions
  1. Thinly slice the onions and saute in a frying pan for five minutes until transparent.
  2. chop the garlic and add to the onions
  3. Thinly slice the potatoes and mix into the onion and garlic
  4. season well and cover for 30 minutes, give the potatoes a bit of a stir every five minutes to ensure even cooking.
  5. Roast the cherry tomatoes in a little olive oil
  6. Add the oregano to the potatoes five minutes before the end
  7. Slice the taleggio and layer into the potatoes when they are cooked through
  8. serve with the roast cherry tomatoes and a side of brocolli
