  • 2 large plums diced
  • 1 large apple peeled.cored and diced
  • 2 medium peaches diced
  • 1 cup diced cantaloupe
  • 2/3 cup sultanas or raisins
  • 2 tablespoons lemon juice
  • 1.2 cup meleted good quality honey
  • 3 tablesppons melted butter
  • 1.5 teapoons ground cinammon
  • 1/2 cup couscous
  • 3-4 tablespoons crushed pistachios

Directions
  1. combine plums,apple,peaches,cantaloupe,sulatana,lemon juice and honely. put in a deep skillet cover with lid and cook over low heat for 10 minutes.. add coucous,cinammon and butter, continue cokking over low heat, stirring gently till coucous is cooked ( 3-5 minutes roughly.
  2. pour mix in a serving dish and allow to cool for 1 hour. sprinkle with pistachios.....enough for 8 servings..
