How to make it

  • Preheat oven to 400
  • In a large skillet, cook ground beef till no longer pink
  • Add chili powder and cook about 1 minute
  • Spoon off fat
  • Add beans, tomatoes and salsa and simmer 3 minutes
  • In a bowl, combine cornbread mix, egg and milk, then stir in cheese
  • Transfer chili mixture to a 9x9 inch or 11x7 inch baking dish
  • Spread cornbread batter over top
  • Bake until golder brown, 15 to 20 minutes
  • Let cool 5 minutes before serving
