Bean amp Spinach Ravioli

- 1/2 cup pre-cooked or canned white beans (I cooked my own; used a tsp of becel olive oil marg in the cooking water) shopping list
- 50 grams of frozen chopped spinach shopping list
- 1/2 cup part skim ricotta cheese shopping list
- 30 wonton wrappers shopping list
How to make it
- Heat a large pot of water. Bring to a boil.
- Meanwhile, defrost the spinach in microwave. Squeeze out excess moisture. Place in food processor with beans & cheese. Process until smooth. You should have approx 1 cup of filling.
- Spread out wrappers on a counter. Place 1 tsp of filling on each wrapper. Moisten edges and fold on t he diagonal. Seal edges.
- Boil in water for about 2 minutes.
- Top with tomato sauce, diced tomatoaes, and/or cheeses. YUM!
- Makes 3 servings of 10 ravioli each.
