Bean Amp Spinach Ravioli Recipe
I buy frozen chopped spinach, that comes loose in a resealable bag. HANDY!

Ingredients
  • 1/2 cup pre-cooked or canned white beans (I cooked my own; used a tsp of becel olive oil marg in the cooking water)
  • 50 grams of frozen chopped spinach
  • 1/2 cup part skim ricotta cheese
  • 30 wonton wrappers

Directions
  1. Heat a large pot of water. Bring to a boil.
  2. Meanwhile, defrost the spinach in microwave. Squeeze out excess moisture. Place in food processor with beans & cheese. Process until smooth. You should have approx 1 cup of filling.
  3. Spread out wrappers on a counter. Place 1 tsp of filling on each wrapper. Moisten edges and fold on t he diagonal. Seal edges.
  4. Boil in water for about 2 minutes.
  5. Top with tomato sauce, diced tomatoaes, and/or cheeses. YUM!
  6. Makes 3 servings of 10 ravioli each.
