How to make it

  • depending on size (this setup is for a 1 lb steak, I eat larger steaks with 1 inch or thicker cuts) 1/2 cup italian dressing
  • 1/2 cup beer budweiser unless you prefer the german beer taste 1/2 cup st pauli girl or even heineken for more distinctive taste, ive found if the current beer your drinking while cooking is used, the flavor of the beer is'nt recognized as much so to opt for a stronger satisfying taste in this case use something stronger than what youre drinking if at all. Jack daniels or even spiced rum for sweetness may work well, experiment!
  • salt and pepper surface of steaks and use ur steak seasoning, I use ground pepper medley and press it with a spoon before it goes in the marinade(I use johnnys steak seasoning but when not available I use kroger steak seasoning).
  • when the marinade time is over put on plate and season with you steak seasoning and maybe another splash of ground pepper
  • larger sized jalapeno cut into 1/4 pieces seeded or deseeded depending on your heat flavor you prefer
  • vadalia sweet onion or your preference of onion cut into thick slices or even quarter whole onion if you like smoked veges in quantity
  • stir this marinade with the peppers and onions
  • add your seasoned steak into this and refrigerate or leave on counter for 30-40 mins and drink some beer mean while if you like to drink beer
  • I use a brinkman smoker/grill. I put in charcoal at the middle where the water would NORMALLY BE set at.
  • I start the process before you normally would on a grill where u wait till coal is grey red hot, ur charcoal will burn out before its time if not. It takes additional time because the distance from the grate where your steak is cooking at which is good for the slow cook smoke method.
  • I put plenty of charcoal in and once its pretty hot and im about to put my steak on I throw in wood CHIPS-not chunks. The chips smoke quite a bit for about 10 mins, every 15 mins Ill put more in or consistently watch the smoke and make sure its smoking heavily with the mesquite chips.Chunks will generate alot of heat so if you do this know the cooking time may lessen.
  • Depending on alot of things, I generally smoke this steak for 45-60 mins. Dont be fooled when the steak looks red externally that is only the smoking that does that.
  • When ur steak is nearing done for your taste, take ur remaining marinade in ur bowl and put some flour in it to thicken it some but not too thick, now add some A1 to it and mix well
  • remove your vegetables off the top of the steak and generously spread the thicker marinade over your steak
  • also spread on your vegetables as well, especially open areas such as the internal part of your peppers
  • add another handful of chips to the center of the coals which are now weakening and let it get one more breath of good solid smoke
  • remove your masterpiece and let sit 5 minutes
  • and now that you have drank a six pack or better enjoy this 1 lb masterpiece of meat you thought you wouldnt ever be able to eat! and let me know what you thought!
