How to make it

  • First you want to add some butter to a large pan over medium flame.
  • Saute your onion, garlic, curry, and cumin unitl onion is soft.
  • Now you can add in your apples, pumpkin, broth, water, and sugar.
  • You want to this often, letting boil.
  • Cover this with a lid and let simmer approx. 25 min.
  • Next you want to puree the soup in a blender until creamy.
  • Pur soup back into the hot pot and reheat this.
  • Ladle up and serve!

    Made this two days ago and finally got back around to having some. I was worried about the large amount of curry but it turned out well.

    Made a double batch. It tastes better with cornbread than crackers.

    Also used fresh pumpkin instead of canned.
