Pumpkin and Curry Soup

- 1 (15 oz.) can of pumpkin puree shopping list
- 4 peeled, cored and chopped macintosh apples shopping list
- 4 c. of chicken broth shopping list
- 1 c. of water shopping list
- 1 tsp. of white sugar shopping list
- 1 tbsp. of butter shopping list
- 1 finally chopped onion shopping list
- 2 cloves of crushed garlic shopping list
- 1 tbsp. of curry powder shopping list
- 1 tsp. of ground cumin shopping list
How to make it
- First you want to add some butter to a large pan over medium flame.
- Saute your onion, garlic, curry, and cumin unitl onion is soft.
- Now you can add in your apples, pumpkin, broth, water, and sugar.
- You want to this often, letting boil.
- Cover this with a lid and let simmer approx. 25 min.
- Next you want to puree the soup in a blender until creamy.
- Pur soup back into the hot pot and reheat this.
- Ladle up and serve!

Made this two days ago and finally got back around to having some. I was worried about the large amount of curry but it turned out well.
Made a double batch. It tastes better with cornbread than crackers.
Also used fresh pumpki...morepointsevenout in Athens loved it
