Curried Lamb With Fresh Mango Chutney

- 2 lamb shanks, 2 lamb shoulders steaks (yielding about 2 lbs of meat without the bone) shopping list
- 2 large onions, yellow chopped shopping list
- 3-5 cloves of garlic, crushed shopping list
- 2 olive oil with butter shopping list
- 2 Tbsp curry powder shopping list
- 1 tsp sea salt shopping list
- 1 tsp course ground black pepper shopping list
- 2 Chile peppers hot Hungarian wax de-seeded and pith removed diced shopping list
- 1 lemon sliced (with rind) shopping list
- 2 peeled and chopped apples Pink Lady if possible shopping list
- 1/3 cup of raisins shopping list
- 2 cups of chicken broth shopping list
- 10 small red potatoes, quartered shopping list
- serve with rice and chutney shopping list
- Marinade: shopping list
- grind and mix with 2 Tbsp of olive oil marinate lamb pieces overnight shopping list
- 2 Tbsp of toasted coriander seeds shopping list
- 11/2 Tbsp cumin shopping list
- 1 Tbsp curry powder shopping list
- 2 tsp fresh rosemary leaves shopping list
- 2 tsp fresh thyme shopping list
- 1 tsp sea salt shopping list
- 1 tsp fresh ground pepper shopping list
How to make it
- 1 Preheat oven to 300 degrees F. On stovetop, brown the meat in a little bit of olive oil in an oven-safe pan. Remove meat from pan.
- 2 Add olive oil with a little bit of unsalted butter to pan, add curry powder, cook gently for a minute or two. Add onions and garlic and cook 5 minutes. Return meat to pan.
- 3 Add sliced lemon, apples, raisins, chicken broth, salt and pepper and hot peppers. Put pan, covered, in oven and cook for 3 hours. In the last 45 minutes, remove from oven and put in potatoes. Return to oven.
- Serve with chutney and yogurt over rice.

Great post RR. Not the way I usually make but what great a great flavor combo. Do you ever get the feeling it might be a tad sweet? Next batch of lamb curry goes this way. Grazzi. RJ
