Limey Pistachio Bars

- 1 lb of butter, at room temperature shopping list
- 1 cup of light brown sugar shopping list
- 1 tbsp green food colouring; optional shopping list
- 4 cups of flour shopping list
- 1/2 cup of cornstarch shopping list
- 2 tbsp fresh lime zest shopping list
- 1 cup shelled pistachios shopping list
- 1 cup of white chocolate chips shopping list
How to make it
- Preheat oven to 325 degrees.
- Beat the butter with the sugar and food colouring until fluffy.
- Next add lime zest and cornstarch.
- Mix well.
- And add the flour and mix until blended.
- Add chocolate chips, and pistachios and mix until well-combined.
- Using a 9x13-inch baking pan, covered with parchment paper, pour batter into pan.
- Press the dough evenly across the pan(about 1/2 of an inch thick). The dough will not fill the pan completely.
- You should have a good 2 inches of space between the dough and the edge of the pan.
- Put the pan on to the middle rack in your oven and bake for 30 minutes.
- Turn the pan and continue baking until the dough is golden brown, and firm to the touch. Do not over bake.
- Let cool.
- Cut into bars.
