TILAPIA FAJITAS This recipe came from an estate sale. I obtained it when I purchased the family collection from the Garza Estate in Rowlett, Texas in 1988.

Ingredients
  • 1-1/2 pounds tilapia fillets
  • 1/8 teaspoon garlic powder
  • 1/8 teaspoon chili powder
  • 1/8 teaspoon fresh ground black pepper
  • 1 tablespoon lime juice
  • 1/4 teaspoon crushed red hot pepper
  • 2 teaspoon Worcestershire sauce
  • 2 tablespoons vegetable oil
  • 1 white onion sliced
  • 1 green bell pepper sliced
  • 1 red bell pepper sliced
  • 1/4 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 1 tomato diced
  • 10 flour tortillas

Directions
  1. Salsa, guacamole and/or cheddar cheese for garnish
  2. Combine garlic powder, chili powder, pepper, lime juice, red pepper and Worcestershire.
  3. Marinate fillets 1 hour in a plastic bag then heat oil in large frying pan over medium heat.
  4. Sauté onions 5 minutes then add peppers and cook until just hot then season with salt and pepper.
  5. Place peppers and onions on a serving dish and keep warm.
  6. Remove fillets from marinade and cook in frying pan on medium heat until fish flakes easily.
  7. Place finished fish on serving dish over peppers and onions.
  8. Serve with tortillas, salsa, guacamole and shredded cheese.
