This creamy pasta dish is quick and easy to make.

Ingredients
  • 250g penne pasta/1 cup per person
  • 2 teaspoons olive oil
  • 1 medium brown onion, diced
  • 1 clove garlic, crushed
  • 2 single chicken breast fillets, sliced thinly
  • 1/2 cup chicken stock
  • 1/2 cup thickened cream
  • 250g broccoli, washed and chopped small
  • 1 tablespoon seeded mustard
  • Salt
  • Pepper

Directions
  1. Cook pasta.
  2. Meanwhile, heat oil in frying pan, saute onion and garlic, stirring until onion is soft.
  3. Add the chicken fillets and cook, stirring until the chicken is browned and just cooked through.
  4. Add stock, cream and broccoli, simmer, uncovered until the broccoli is just tender.
  5. Stir in mustard and season with salt and pepper.
  6. In a large bowl, combine the pasta and chicken mixture and toss well, then serve.
