Ingredients
  • 3/4 cup oil
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 2 eggs
  • 1 tsp vanilla
  • 2 cups whole wheat flour
  • 2 cups rolled oats
  • 1/2 tsp salt
  • 1 tsp soda
  • 1/2 tsp baking powder
  • 1 cup raisins

Directions
  1. Cream oil, sugars, eggs, and vanilla. Add remaining ingredients and mix well.
  2. For bar cookies, spread batter in a
  3. 10 x 15- inch lightly greased baking sheet.
  4. For regular cookies, drop by tablespoonsfuls onto nonstick baking sheets, or use a small ice cream scoop for uniform size. (I pressed the top of cookie, slightly, before placing in oven)
  5. Bake in a 375 degrees F oven 12 to 15 minutes for bar cookies, 8 to 12 minutes for drop cookies.
  6. Time will vary with the weight of the baking sheets used:
  7. Bake 350 degrees F
  8. Bar Cookies~12 - 15 min
  9. Drop Cookies~8 - 12 min
  10. #2 Sunflower Seed Cookies
  11. Prepare cookies as directed above, omitting the raisins. Add 1/2 cup unsweetened coconut and 1/2 cup sunflower seeds.
  12. #3 Crunchy Chip Cookies
  13. Prepare cookies as directed above, omitting the raisins. Add 1/2 cup carob chips and 1/2 cup chopped nuts.
