How to make it

  • 1.Cook the potatos in lightly salted,boiling water
  • for 15 minutes,until tender.Drain and return to the pan.
  • 2.Finely chop half the coriander and add the pan with
  • the tomato and chilli sauce and 90ml/6 tbsb water.Bring to the boil,
  • reduce the heat,cover and simmer gently for 5 minutes.
  • 3.Stir in the prawns and heat briefly until they are warmed
  • through.Do not overheat the prawns or they will quickly shrivel,
  • becoming tough and tasteless.ADD the bamboo shoots.
  • spoon into shallow bowls and serve sprinkled with remaining coriander,torn into pieces
