Broken Tomato Florentine Soup Recipe
Love Tomato Florentine Soup. This is my version using a slow cooker.

Ingredients
  • 1 28-oz can crushed tomatoes, undrained
  • 3 cups Beef Broth - low sodium
  • 1 cup coffee
  • 1 cup water
  • 1 tbsp curry
  • 1 tbsp dried basil
  • 1 tsp cumin
  • 1 tsp salt
  • 1/2 tsp white ground pepper
  • 1/2 cup onion, minced
  • 3 cloves garlic, pressed
  • 2/3 cup carrot, peeled and diced
  • 1 cup rotalini (broken to bite size - yup this is the broken part)
  • 1 6 oz bag, fresh baby spinach - chopped

Directions
  1. Combine all ingredients in a crockpot. Stir well, cover set on high and walk away for about 4 - 6 hours.

Coffee, curry and cumin is an intriguing combination....I'm looking at the pantry and trying to see what I can toss in the crock pot before I leave for the hospital...Hmmm, this may have to wait until I restock. But it sounds like it would cure what ails my saddened heart. Thanks for the recipe.

This sounds fabulous! I would make it minus sugar or splenda, but it sounds wonderful!! On the list to try soon!


I always put a bit of sugar in tomato based stuff because the acid gets to my innards. Not everyone suffers from that. But with all the carrots I can agree that it isn't needed as they will do the same job. I'll take it out I think you are right Sparrow.
