Chocolate Fudge For A Crowd Recipe
Old fashioned chocolate fudge, with some modernized ingredients. Makes 5 lbs - plenty to share at holiday time. Do not substitute ingredients - the fudge will not set up properly.

  • 4 1/2 cups white granulated sugar
  • 1 1/2 cups dairy half and half
  • 1/4 cup (1/2) stick salted butter
  • 12 ounce package semi-sweet chocolate pieces
  • 4 squares (1 oz. each) unsweetened chocolate, chopped
  • 1 jar (7 oz.) marshmallow cream
  • 1 cup chopped walnuts or pecans

Directions
  1. Butter a 9"x13" pan (note: do not use marg. or spray); set aside
  2. Place chocolate bits and marshmallow creme in a large heat-proof bowl, set aside
  3. Combine first three ingredients in heavy, 3 quart saucepan
  4. Bring to a full, rolling boil for six minutes, stirring constantly to prevent scorching. Scrape the sides of the saucepan to prevent the mixture from becoming grainy on sides.
  5. After six minutes, remove from heat and pour over chocolate and marshmallows; mix until combined; add nuts
  6. Beat mixture by hand . until glossy - this can take up to five minutes
  7. Pour into buttered pan.
  8. Let stand several hours before cutting
  9. Store in cool place
  10. Note: if you do not beat the fudge until glossy, it will become grainy after it is cool. Beating is definitely worth the effort!
