Ingredients
  • 2 1/2 lbs pork tenderloin (I'm SURE Boston Butt would work just as well, & it's way cheaper.)
  • 1 T fresh oregano, minced
  • 1 T fresh tarragon, minced
  • 2 tsp fresh rosemary, minced
  • 1 3/4 tsp salt
  • 1/2 tsp black pepper
  • 2 to 2 1/4 cups whole milk, hot

Directions
  1. In a large skillet, brown the pork on all sides, 4-5 minutes total.
  2. Transfer to the slow cooker.
  3. Sprinkle with the herbs, salt and pepper.
  4. Add the milk; it should come halfway up the sides of the meat.
  5. Cover and cook on LOW until it's fork-tender, about 6 hours.
  6. Transfer the pork to a platter and let it rest for 10 minutes.
  7. Cut into half-inch slices and spoon the creamy sauce over them.
  8. Transfer the rest of the sauce into a gravy boat and serve immediately.
