How to make it

  • Cook pasta and ears of corn in salted boiling water about 8 minutes.
  • Drain and rinse with cold water.
  • Mix 1 tsp chili powder, salt & pepper in a bowl and sprinkle over chicken breasts.
  • In a large skillet cook chicken in 1 tbsp oil over med heat for 10-12 minutes or until chicken is no longer pink, turning once.
  • While chicken is cooking, cut the kernels from the cobs.
  • Combine the remaining oil and chili powder along with the lemon juice in a jar.
  • Mix the chicken, corn, tomatoes and pasta
  • Serve onto plates.
  • Drizzle with prepared dressing (the jar of lemon juice oil & chili powder) and lightly sprinke lightly with salt & pepper.
