CHILI CHICKEN CORN N PASTA

- 6oz pkg angel hair pasta shopping list
- 3 ears of fresh corn shopping list
- 1/4 cup veg oil shopping list
- 4 small boneless skinless chicken breasts shopping list
- 1 1/2 tsp chili powder; divided shopping list
- 1/4 tsp salt shopping list
- 1/4 tsp pepper shopping list
- 2 sliced med tomatoes shopping list
- 3 tbsp lemon juice shopping list
How to make it
- Cook pasta and ears of corn in salted boiling water about 8 minutes.
- Drain and rinse with cold water.
- Mix 1 tsp chili powder, salt & pepper in a bowl and sprinkle over chicken breasts.
- In a large skillet cook chicken in 1 tbsp oil over med heat for 10-12 minutes or until chicken is no longer pink, turning once.
- While chicken is cooking, cut the kernels from the cobs.
- Combine the remaining oil and chili powder along with the lemon juice in a jar.
- Mix the chicken, corn, tomatoes and pasta
- Serve onto plates.
- Drizzle with prepared dressing (the jar of lemon juice oil & chili powder) and lightly sprinke lightly with salt & pepper.
