Senegalese Sweet Potato Rice And Bean Stew Recipe
This is a yummy vegetarian dish I came across while looking for a recipe to use up black-eyed peas. tastes even better the next day.

Ingredients
  • 1/2 cup vegetable oil
  • 5 garlic cloves
  • one can tomato paste
  • 2 cups black-eyed peas
  • 5 carrots
  • 2 sweet potato
  • 5 cups of rice (i use organic brown)
  • 1 vegetable stock cube
  • pepper
  • half a mild red chilli

Directions
  1. In one big pot, saute garlic and onion
  2. add tomato paste and mix
  3. add water (about 10 cups) and when it boils add vegie stock cube, beans, carrots, sweet potato, pepper, chilli and salt
  4. boil until beans are tender
  5. add rice
  6. boil 10 mins covered, then 10 mins uncovered
  7. don't stir until very end (if possible)
  8. *you may need to add more water to make sure the rice has enough to cook.
  9. enjoy!
