Pork Chop With Artichoke Recipe
I have been trying to cook with a new vegetable every week. this week was artichoke. i adapted this recipe from one i found online to suit the quantities I had. and served it with broad bean and potato puree which i will also post.

Ingredients
  • 2 pork chops
  • 1 artichoke chopped
  • 1/2 cup white wine
  • one tablespoon of brown sugar
  • 1/2 cup chicken stock
  • salt and pepper

Directions
  1. season the pork with salt and pepper
  2. in a skillet, fry the pork chop until nearly cooked each side
  3. remove the pork chop
  4. pour white wine and stock in pan (watch for spattering)
  5. add artichokes
  6. add brown sugar to taste (depending on bitterness)
  7. replace pork chops until perfectly cooked
  8. when plated, top the pork chop with the artichoke
  9. enjoy!
