Broad Bean And Potato Puree Recipe
I had a recipe for broad bean puree, but didn't have enough beans, so i adapted it to include potato. was lovely and i served with artichoke pork chops which i have also added.

Ingredients
  • One cup broad beans
  • one brown onion (chopped)
  • two small potatos (i used dutch cream)
  • 1/2 cup chicken stock
  • sherry vinegar (i didn't have any so i used a dash of rice wine vinegar and a dash of rose wine)
  • olive oil
  • salt and pepper

Directions
  1. Boil potatos to soften and drain
  2. in a saucepan, fry onion
  3. add chicken stock and bring to boil
  4. reduce heat and add the broad beans and simmer for five minutes
  5. add potato (ensure that potato is moist enough for mashing) and simmer for about 5 minutes
  6. remove from saucepan
  7. roughly mash the mixture and put in blender
  8. add a dash of sherry vinegar, salt and pepper
  9. puree in blender
  10. enjoy!
