How to make it

  • Boil potatos to soften and drain
  • in a saucepan, fry onion
  • add chicken stock and bring to boil
  • reduce heat and add the broad beans and simmer for five minutes
  • add potato (ensure that potato is moist enough for mashing) and simmer for about 5 minutes
  • remove from saucepan
  • roughly mash the mixture and put in blender
  • add a dash of sherry vinegar, salt and pepper
  • puree in blender
  • enjoy!
