How to make it

  • Hollow out the center of each beet.
  • Mix asparagus, egg, and sour cream, season with salt and pepper to taste.
  • Fill each center of beet with the mixture.
  • Place each beet on a lettuce leaf cup. May top each beet with extra sour cream.
  • Note. slice a small piece of beet from the bottom so beet will stand up straight.
  • May serve an additional dressing to pour over the beet such as a favorite vinaigrette or cream type salad dressing.
  • One can also julienne the parts of beet hollowed and sliced and surround the lettuce cups with it.
