Beet and Asparagus Salad

- 6 medium beets cooked shopping list
- 1 1/2 cups asparagus tips cooked and cut up in small pieces shopping list
- 3 hard boiled eggs chopped fine shopping list
- sour cream to bind ( about 1/4 cup ) shopping list
- lettuce leaf cups shopping list

How to make it
- Hollow out the center of each beet.
- Mix asparagus, egg, and sour cream, season with salt and pepper to taste.
- Fill each center of beet with the mixture.
- Place each beet on a lettuce leaf cup. May top each beet with extra sour cream.
- Note. slice a small piece of beet from the bottom so beet will stand up straight.
- May serve an additional dressing to pour over the beet such as a favorite vinaigrette or cream type salad dressing.
- One can also julienne the parts of beet hollowed and sliced and surround the lettuce cups with it.
