aubergine in spicy sauce

- 4 large augergines shopping list
- 5 gloves of garlic shopping list
- 3 boned anchovy filets shopping list
- 1/2 cup finely chopped flatleaf parsely shopping list
- 1 green hot pepper finely chopped shopping list
- 1 table spoon greek oregano shopping list
- salt to taste shopping list
- 2-3 tablespoons of cider vinegar shopping list
- 3 tablespoons fine quality extra virgin olive oil shopping list
How to make it
- preheat oven to 400 degree. cut stem from aubergines. pierce the
- aubergines with a fork in order not to explode while bakinf. put them on a baking dish and bake for about 40 minutes or too soft when touched. meantime in a mortar, put all ingredients except the vinegar
- and mash them thoroughly. scoop the mashed ingrdients in a little bowl. add vinegar and olive oil and mix throughly . the end product
- will be a thick sauce. in a lrge bowl cut aubergines and mash them
- mix with the the herb vinegar mix. let it cool to room temp or put in a fridge. serve on sliced lightly toasted panini , baguettes or pita bread
- ithis is very nutritional,high in vitamin with almost zero calories except for the good olive oil which is good for the cholestrol
