PILCHARD COTTAGE PIE WITH WHEELS

- 3 - 4 potatoes, peeled and cut into chunks [the cheat use smash] shopping list
- 2 tablespoons butter or margarine [for mash] shopping list
- 1 x teaspoon baking powder [to fluff up smash] shopping list
- 4 tablespoons milk shopping list
- salt and ground black pepper to taste shopping list
- 425g can Pilchards in tomato or chili shopping list
- 100g frozen or canned mixed vegetables, drained shopping list
- 1/2 cup soft rye breadcrumbs [optional] shopping list
- A few sprigs of parsley and green ends of spring onions to garnish the plate. shopping list
How to make it
- Heat the oven to 200ºc [390ºf]. Grease a casserole dish. Cook the potatoes in salted boiling water until soft. Drain well, mash with butter or margarine and milk [If using Smash follow directions on the pack add fold in teaspoon baking powder], and season with a pinch salt
- Tip the pilchards into a bowl with the sauce, split them apart length wise, remove back bone then break them up into large chunks in their sauce. Gently mix in the vegetables, and season with salt and pepper.
- Place the pilchard and vegetable mixture into the casserole. Top with mashed potato. Scatter the breadcrumbs on top and bake uncovered for 20 to 30 minutes until crunchy and golden.
- For the last 5 minutes place under the grill to crisp the top of the mash.
- HINT : 1) Watch continuously while under the grill, you want golden brown not dead black (don’t laugh it happened to me)
- 2) Until you are more comfortable with cooking from the chair I would suggest you ask for help to plate the dish, working with a hot casserole dish can be tricky.
- 3) Smash is a trade name in South Africa for instant mash.
