Ingredients
  • 2 sliced zucchini
  • 1 sliced into rings large onion
  • 2 c. of sliced fresh mushrooms
  • 1 sliced green bell pepper
  • 2 chopped large tomatoes
  • 2 tbsp. of olive oil
  • 3 cloves of minced garlic
  • 2 tsp. of dried parsley
  • 1 eggplant(cut 1/2 in.)
  • salt to taste
  • 1 c. of grated Parmesan cheese

Directions
  1. First, preheat oven to 350 degrees.
  2. Now run olive oil over casserole dish.
  3. Add olive oil to a pan over medium heat.
  4. Then saute garlic until brown.
  5. Then mix in parsley and eggplant.
  6. You want to cook the eggplant unitl soft.(season with salt)
  7. Now pread the eggplant on the bottom of the casserole dish.
  8. Then sprinkle parmesan cheese over the eggplant.
  9. Now spread the zucchini in a even layer over eggplant.
  10. You want to continue this process now using the onion, mushrooms, bell pepper, and tomatoes(add salt and cheese to each layer.)
  11. Now bake this for about 45 min.
  12. Serve!
