Easy Minestrone Soup

- 1/4 cup olive oil shopping list
- 3 Tbsp dried parsley shopping list
- 3 Tbsp dried basil shopping list
- 1 chopped onion shopping list
- 3 cloves garlic, chopped shopping list
- salt and pepper, to taste shopping list
- 2 peeled, diced potatoes shopping list
- 3 sliced carrots shopping list
- 1/2 cup tomatoes shopping list
- 16 oz can of peas shopping list
- 15 oz can of Veg-All shopping list
- 16 oz can of green beans shopping list
- 16 oz can of red kidney beans shopping list
- 2 cups chopped spinach shopping list
- 2 beef bouillon cubes shopping list
- 2 quarts water shopping list
- 1 cup ditalini ( small pasta) shopping list
- parmesan cheese shopping list
- 2 Tbsp pesto shopping list
How to make it
- Saute onion, garlic, parsley and basil in oil.
- Add potatoes and carrots. Simmer 5 minutes
- Add remaining ingredients, except pasta.
- Cover and simmer for one hour until vegetables are tender.
- Add uncooked pasta and simmer an additional ten minutes.
- Sprinkle with grated Parmesan cheese and add 2 Tbsp pesto.
