Green Curry Chicken

- 1 c uncooked basmati rice shopping list
- 1 lb (1" cubes) chicken breast tenderd shopping list
- 2 to 3 tsps. green curry paste shopping list
- 1 (14oz) can light coconut milk,divided shopping list
- 2 c tricolr prechopped bell pepper mix shopping list
How to make it
- Cook rice according to directions,omitting salt and fat. stir in 1/4 Tsp salt. Heat large,nonstick skillet over med-high heat. Coat pan with cooking spray.
- Sprinkle chicken with 1/4 tsp salt. Add chicken tp pan,saute 4 mins or till chicken is lightly browned. Stir in curry paste;cook 1 min,stirring frequently. Stir in 1 c coconut milk;bring to boil. Reduce heat,and simmer 4 mins. or till chicken is done,stirring occasionally.
- Stir in bell pepper mix,1/4 tsp salt,and remaining coconut milk;cook 3 mins. or till vegetables are tender. Serve chicken mixture over rice. Sprinkle with fresh cilantro leaves,if desired.
