Spicy Coconut Curry Chicken Soup

- 4 small shallots shopping list
- 2 cloves garlic shopping list
- 1 jalepeno pepper shopping list
- tbs olive oil shopping list
- 2 chicken breasts shopping list
- 1 litre chicken stock shopping list
- 1 can coconut milk shopping list
- 2 tbs red curry paste shopping list
- 1 lime shopping list
- cayenne shopping list
- tumeric shopping list
- rice noodles shopping list
- cilantro shopping list
- green onions shopping list
- bean sprouts shopping list
How to make it
- Fry chicken in a little oil until just cooked. Cool and shred with hands into small (bite size) peices.
- Sautee finely chopped shallot, jalepeno and garlic in remaining olive oil until softened. Grate zest of lime to mixture. Add red curry paste and seasonings, mix well.
- Pour in the can of coconut milk. Stir. Slowly add in chicken broth and the juice of the lime. Simmer on low heat at least 10 minutes.
- Meanwhile, cook rice noodles; drain.
- Add rice noodles to soup, stir.
- Just before serving, toss in chopped cilantro and green onions, Sprinkle bean sprouts on top.

amd i notice the chicken hater has not been here yet!! that person is giving low rating to chicken post, but i give it a 5cuzpat in Sikeston loved it
