Ingredients
  • 1 cubed medium eggplant
  • 2 zcubed ucchini
  • 2 cubed medium yellow squash
  • 2 seeded and cubed green bell peppers
  • 1 diced yellow bell pepper
  • 1 chopped red bell pepper
  • 4 chopped roma (plum) tomatoes
  • 2 sliced into thin rings onion
  • 3 cloves of minced garlic
  • 2 sliced into thin rings onions
  • 1/2 c. of olive oil
  • 1 bay leaf
  • 2 tbsp. of chopped fresh parsley
  • 4 sprigs fresh thyme
  • salt and pepper to taste

Directions
  1. First you want to add olive oil to a pan over medium flame.
  2. Saute the onions and garlic until tender.
  3. Now saute zucchini in separate pan in batches until brown.
  4. You can add this to the onion and garlic now.
  5. Now you can saute everything togethe one batch at a time, adding more olive oil.
  6. Once each veggie is sauted, spoon it to the larger pot.
  7. Once this is finished, add salt, pepper, bay leaf, and thyme.
  8. Now you want to cover this and cook over medium flame for about 15 to 20 min.
  9. Next you can add chopped tomatoe and parsley to large pot and cook for approx. 10-15 more min.
  10. Once this is done, remove bay leaf.
  11. Ladle and serve!
