No Fuss Risotto

- 1 stick butter shopping list
- 1 onion, finely chopped shopping list
- 1 large can chicken broth shopping list
- 1/2 cup dried porcini mushrooms, softened (can soften in water or more sherry) shopping list
- 1/2 cup dry sherry shopping list
- 2 cups arborio rice shopping list
- parmesan cheese, to taste shopping list
How to make it
- Saute onion in butter until golden.
- Add soup and softened mushrooms.
- Stir in sherry.
- Cook for 25 minutes.
- Pour in rice, cover and let stand until thickened.
- Add Parmesan cheese and serve.
