Potato Bacon Casserole Recipe
Very comforting, very tasty, very herby and always one of the first thing gone when I serve a buffet style dinner.

Ingredients
  • 16 ounces frozen hash browns thawed
  • 1/2 cup white onions chopped
  • 3 ounces bacon cooked and crumbled
  • 2 ounces Monterey jack cheese shredded
  • 12 ounces evaporated milk
  • 1/2 cup egg whites slightly beaten
  • 1 teaspoon salt

Directions
  1. Preheat oven to 350. Spray square dish with cooking spray. Layer potatoes, onions, cheese and bacon then set aside. In mixing bowl combine milk, egg whites and salt. Mix well then pour evenly over ingredients in dish. Cover and bake for one hour. Uncover and bake additional five minutes.

O.K. Cat lets talk--why the egg whites only? Also, never in my life have I used evaporated milk. I have cooked in many restaurants and never heard of it. I think I'm liking it though. I bought a can of it today. I just don't get it.


The egg whites only are to cut down on cholesterol. You can certainly use the entire egg if you want, I have and it is good. I had to adapt to evaporated milk myself, but now I never have less than 5 cans in my home, good stuff especially for baking.
