How to make it

  • Thinly slice chicken and cut into medium size pieces
  • Put chicken into large mixing bowl
  • Put touch of olive oil onto the chicken and mix
  • Add salt, pepper, basil
  • Sprinkle flour - just enough to coat
  • Set bowl aside
  • Pour olive oil into pan and put on med-high heat
  • Ensure entire pan is coated with oil
  • Once oil is hot, place chicken pieces into pan (don't over-crowd the pan)
  • Sprinkle chicken with cinammon while in pan
  • Cook on one side until brown, then flip each piece
  • Sprinkle opposite side of chicken with cinnamon
  • Let chicken brown
  • Once chhicken is browned on both sides, add sherry wine to pan and lower heat to med-low range
  • Add tab of butter
  • Mix periodically
  • Serve before the pan has dried
  • (Cleaning hint - put water and soap into the pan immediately after it is empty - the cinnamon carmelizes and is like sugar to remove)

    I decided to try this today but I baked the chicken since I didnt have a sautepan available. I smell the heavenly aroma wafting to me now so Im excited! =) Thanks
