How to make it

  • Preheat oven to 325. Prepare a rectangular cake pan with cooking spray then set aside. Combine wafers, 1/4 cup pecans and butter then mix until crumbly then press mixture onto bottom of prepared pans then set aside. In another mixing bowl combine cream cheese, sugar, sour cream, flour, vanilla extract and eggs then mix until smooth then pour over crust in pan. Bake for 45 minutes then cool and refrigerate for hours. Drizzle top with caramel topping and sprinkle with remaining pecans.

    I love all things cheesecake and these look heavenly, I just have one question, the pecans, see the VA pulled my teeth and so far I have not been able to afford to replace them, so nuts are sort of out of my diet for the time being. Will it effect the taste much if I don't add them or is there like a pecan paste or flavoring I can use to substitute? I mean I can always take them out as I eat the dessert, I was just wondering? I'm making them tomorrow as soon as I get to the grocery store. They do look yummy!

    Your guests will love this delight. I have never had any left. I also usually take desserts to potlucks or family gatherings. This one is a requested and favorite. Enjoy.
