How to make it

  • Preheat oven to 450°.
  • Mix zucchini (and any excess liquid), egg, vanilla, flour, sugar, butter, and evaporated milk in a blender until thoroughly blended. Pour mixture into unbaked pastry shell. Sprinkle top of pie with cinnamon and nutmeg until it is lightly covered.
  • Bake pie for 20 minutes at 450°. Lower the oven temperature to 350° and bake for 10 minutes more. Let cool completely.

    This reminds me of being around 10 years old & a friend brought zucchini bread into school. She was so proud of it & no one would try it because it was made from a veg. not a fruit.
    She was my friend, so I walked through all the ninnies who were making fun of her, the boys were just as mean as the girls & I said, "It sounds good. I'd love a piece."
    You could have heard a pin drop. Honestly, I thought it was going to be awful & I was going to have to fib about how delish it was.
    The joke was on me, it was divine! Strange at first as I didn't know what to expect. But as soon as I finished the first piece, I asked for another. Then everyone wanted to try it.
    She broke the loaf in half & gave it to me.
    She then turned to the nincompoops & said, "Sorry, there isn't anymore!"
    With a terrific smile to me, she said, "Let's go outside to eat our fabulous zucchini bread in peace."
    Years later she thanked me for not being afraid to try something everyone else had hurt her feelings for baking for the first time.
    More importantly, I learned, never turn your nose up at anything. Try it & if you do not like it, never insult the cook. There is no law that mandates one must have 2nds.
    So, in this spirit, I'm really looking forward to trying your Zucchini Custard Pie & I give it 5 Zucchinis!
