  • Campanelle Pasta with Parsley Butter
  • Ingredients:
  • For the Parsley Butter:
  • 1 cup (packed) coarsely chopped fresh Italian parsley
  • 2 teaspoons (packed) grated lemon peel
  • 1 garlic clove, peeled
  • 1/2 cup (1 stick) unsalted butter, room temperature

Directions
  1. For the Pasta:
  2. 1 lb campanelle (trumpet-shaped pasta), fiori, or fusilli pasta
  3. Directions:
  4. Prepare the Parsley Butter:
  5. Finely chop parsley, lemon peel, and garlic in processor.
  6. Add butter and process until well blended.
  7. Season parsley butter to taste with salt and pepper. (Can be prepared 3 days ahead. Cover and refrigerate. Bring to room temperature before using.)
  8. Prepare the Pasta:
  9. Cook pasta in large pot of boiling salted water until 'al dente'. Drain.
  10. Transfer pasta to large serving bowl.
  11. Add half of parsley butter (about 1/3 cup) to pasta; toss to coat.
  12. Season to taste with salt and pepper. Makes 6 servings.
