Carrot Cake

- 4 eggs shopping list
- 1 1/4 C. vegetable oil (I use Crisco baking sticks) shopping list
- 2 C. sugar shopping list
- 2 t. vanilla extract shopping list
- 2 C. flour shopping list
- 2 t. baking soda shopping list
- 2 t. baking powder shopping list
- 1/2 t. salt shopping list
- 2 t. cinnamon shopping list
- 3 C. grated carrots (I use the mini chopper or food processor) shopping list
- 1 C. Chopped walnuts (I use about 1/2 cup, adjust to your own taste) shopping list
- 1/2 C. butter, softened shopping list
- 8 oz. cream cheese, softened shopping list
- 4 C. powdered sugar shopping list
- 1 t. vanilla extract shopping list
How to make it
- Preheat oven to 350. Grease & flour 9 x 13 pan.
- Beat eggs, oil. sugar, and vanilla.
- Mix in flour, baking soda, baking powder, salt, and cinnamon.
- Stir in carrots. Fold in nuts.
- Pour into pan
- Bake 40-50 minutes, until toothpick comes out clean.
- Let cool 10 minutes and turn out of pan.
- Mix together last 4 ingredients.
- Frost the cake, when cooled.
