Best carrot cake I have ever made. I love it. I usually keep it in the fridge and have it in the afternoon with a cup of coffee. YUM!

Ingredients
  • 4 eggs
  • 1 1/4 C. vegetable oil (I use crisco baking sticks)
  • 2 C. sugar
  • 2 t. vanilla extract
  • 2 C. flour
  • 2 t. baking soda
  • 2 t. baking powder
  • 1/2 t. salt
  • 2 t. cinnamon
  • 3 C. grated carrots (I use the mini chopper or food processor)
  • 1 C. Chopped walnuts (I use about 1/2 cup, adjust to your own taste)
  • 1/2 C. butter, softened
  • 8 oz. cream cheese, softened
  • 4 C. powdered sugar
  • 1 t. vanilla extract

Directions
  1. Preheat oven to 350. Grease & flour 9 x 13 pan.
  2. Beat eggs, oil. sugar, and vanilla.
  3. Mix in flour, baking soda, baking powder, salt, and cinnamon.
  4. Stir in carrots. Fold in nuts.
  5. Pour into pan
  6. Bake 40-50 minutes, until toothpick comes out clean.
  7. Let cool 10 minutes and turn out of pan.
  8. Mix together last 4 ingredients.
  9. Frost the cake, when cooled.
