Corn Pudding

- 1 (14.75 oz) can creamed corn shopping list
- 1 1/2 cups fresh corn (if not available, canned can be used) shopping list
- 3/4 cup white cornmeal (I'm sure yellow would work also) shopping list
- 1/2 cup butter, melted shopping list
- 2 onions, chopped shopping list
- 3 eggs, beaten shopping list
- 2 cans diced green chilies, drained ()4.5 oz) shopping list
- 1/2 teaspoon baking soda shopping list
- Pinch of cayenne pepper shopping list
- 1 cup buttermilk shopping list
- 1 1/2 cups shredded pepper jack cheese shopping list
How to make it
- Preheat oven to 350
- Combine the first 7 ingredients and mix
- Stir the baking soda and cayenne pepper into the buttermilk and add to the corn mixture
- Lightly butter a 9x13 inch glass baking dish
- Pour half the batter into the dish, top with the shredded cheese and top with the remaining batter
- Bake for 55-60 minutes, until top is lightly browned
- Serve immediately
