Corn Pudding Recipe
A great holiday brunch buffet dish served with Honey Baked Ham. Also good with any grilled entree.

Ingredients
  • 1 (14.75 oz) can creamed corn
  • 1 1/2 cups fresh corn (if not available, canned can be used)
  • 3/4 cup white cornmeal (I'm sure yellow would work also)
  • 1/2 cup butter, melted
  • 2 onions, chopped
  • 3 eggs, beaten
  • 2 cans diced green chilies, drained ()4.5 oz)
  • 1/2 teaspoon baking soda
  • Pinch of cayenne pepper
  • 1 cup buttermilk
  • 1 1/2 cups shredded pepper jack cheese

Directions
  1. Preheat oven to 350
  2. Combine the first 7 ingredients and mix
  3. Stir the baking soda and cayenne pepper into the buttermilk and add to the corn mixture
  4. Lightly butter a 9x13 inch glass baking dish
  5. Pour half the batter into the dish, top with the shredded cheese and top with the remaining batter
  6. Bake for 55-60 minutes, until top is lightly browned
  7. Serve immediately
