How to make it

  • Soak the beans overnight, drain and rinse.
  • Cut bacon into 1/2 inch pieces and begin browning in a stock pot, stirring frequently.
  • While the bacon is browning chop the onion, green pepper and mince the garlic, then set aside.
  • Once the bacon is almost browned add the onion, green pepper and garlic, stirring frequently.
  • Cut the andouille sausage in half lengthwise, then cut into 1/2 inch pieces.
  • Once the onions and pepper have wilted some, add the cut up sausage and stir to combine it with the other ingredients.
  • Now strip the thyme leaves from the stems and add the leaves, black pepper, salt and cayenne.
  • Add the chicken stock and the red beans, bring to a boil, stirring frequently.
  • Once it boils reduce the heat, cover and simmer on low for two hours, stirring it every twenty to thirty minutes.
  • Once you have boiled the mixture and reduced the heat it can be finished in a Crock-pot for two hours.
  • Once it is close to finished cook the rice.
  • Serve over a scoop of cooked rice.
  • Feel free to substitute jalapeno peppers for cayenne if you prefer.
