Red Beans And Rice Recipe
Red beans and rice with andouille sausage very filling and a great change from chili.

Ingredients
  • Bacon 1 pound
  • Andouille sausage 1 pound
  • Red beans 1 pound
  • Garlic 6 cloves
  • FreshThyme 1 TBSP
  • Cayenne pepper 1/2 tsp
  • Black pepper 1 tsp
  • Salt 1 TBSP
  • Onions 2 cups
  • Green pepper 2 cups
  • Chicken stock 3 quarts
  • Rice 4 cups.

Directions
  1. Soak the beans overnight, drain and rinse.
  2. Cut bacon into 1/2 inch pieces and begin browning in a stock pot, stirring frequently.
  3. While the bacon is browning chop the onion, green pepper and mince the garlic, then set aside.
  4. Once the bacon is almost browned add the onion, green pepper and garlic, stirring frequently.
  5. Cut the andouille sausage in half lengthwise, then cut into 1/2 inch pieces.
  6. Once the onions and pepper have wilted some, add the cut up sausage and stir to combine it with the other ingredients.
  7. Now strip the thyme leaves from the stems and add the leaves, black pepper, salt and cayenne.
  8. Add the chicken stock and the red beans, bring to a boil, stirring frequently.
  9. Once it boils reduce the heat, cover and simmer on low for two hours, stirring it every twenty to thirty minutes.
  10. Once you have boiled the mixture and reduced the heat it can be finished in a Crock-pot for two hours.
  11. Once it is close to finished cook the rice.
  12. Serve over a scoop of cooked rice.
  13. Feel free to substitute jalapeno peppers for cayenne if you prefer.
