MARINATING CHICPEAS WITH ONION,GARLIC AND VINEGAR

  • 2 CANS GOOD QUALITY GARBANZOS
  • 2 BAYLEAVES
  • 1/2 CUP EXTRA VIRGIN OLIVE OIL
  • 4 CLOVED OF GARLIC FINELY MINCED
  • 2 SHALLOTS FINELY MINCED
  • 2 HARD BOILED EGG YOLKS CHOPPED AND SIEVED
  • 1/2 CUP OF FINELY CHOPED FLATLEAF PARSLEY
  • 1/4 REDWINE VINEGAR
  • 3 TABLESPOONS CAPERS
  • SALT AS DESIRED

Directions
  1. DRAIN CHICKPEAS, POT IN POT WITH THE BAY LEAVES AND TOP IT WITH WATER. BRING TO BOIL AND SIMMER FOR ABOUT 12-15 MINUTES. IN A SMALL MIXING BOWL PUT IN THE SIEVED EGG YOLKS,AND ADD TO IT THE OIL AND THE VINEGAR AND BELND THOROUGHLY WITH A WISK. SITR IN THE GARLIC,SHALLOTS,2 TABLE SPOONS OF THE PARSLEY,CAPERS ND THE DRAINED CHICKPEAS. REFRIGERATE OVERNIGHT. BRING TO ROOM TEMPERATURE AND SPRINKLE WITH THE REST OF THE PARSLEY BEFORE SERVING
