  • DRAIN CHICKPEAS, POT IN POT WITH THE BAY LEAVES AND TOP IT WITH WATER. BRING TO BOIL AND SIMMER FOR ABOUT 12-15 MINUTES. IN A SMALL MIXING BOWL PUT IN THE SIEVED EGG YOLKS,AND ADD TO IT THE OIL AND THE VINEGAR AND BELND THOROUGHLY WITH A WISK. SITR IN THE GARLIC,SHALLOTS,2 TABLE SPOONS OF THE PARSLEY,CAPERS ND THE DRAINED CHICKPEAS. REFRIGERATE OVERNIGHT. BRING TO ROOM TEMPERATURE AND SPRINKLE WITH THE REST OF THE PARSLEY BEFORE SERVING
