Spinach Quiche

- 1/4 cup butter shopping list
- 3 cloves garlic, chopped shopping list
- 1 small onion, chopped shopping list
- 1 10oz package frozen chopped spinach, thawed and drained shopping list
- 1 4.5 oz can mushrooms, drained shopping list
- 1 6oz package herb and garlic feta, crumbled shopping list
- 1 8oz package shredded cheddar cheese shopping list
- salt & pepper to taste shopping list
- 1 9 inch unbaked deep dish pie crust shopping list
- 4 large eggs, beaten shopping list
- 3/4 cup milk shopping list
How to make it
- preheat oven to 375 degrees F.
- In a medium skillet, melt butter over med heat. Saute harlic and onions in butter until lightly browned. about 7 mins. stir in spinach, mushrooms, feta and 1/2 cup cheddar cheese. Season with salt and pepper. Spoon mixture into pie crust.
- In a medium bowl, whisk together eggs and milk. Season with salt and pepper. Pour into the pastry shell, allowing egg mixture to throughly combine with spinach mixture.
- Bake in preheated oven for 15 mins. sprinkle top with remaining cheddar cheese and bake an additional 35-4- mins. until set in center. allow to stand 10 mins. before serving.
