How to make it

  • Preheat oven to 350*F. Lightly spray an 8X8 square cake pan and set aside.
  • In a small bowl coat sliced apples with first part sugar and cinnamon.
  • In a large bowl combine the Kinnikinnick All Purpose Celiac Flour, Kinnactive Baking Powder, salt and granulated sugar. Stir until combined. Add to the flour mixture 2 slightly beaten eggs, oil, orange juice, orange zest and vanilla. Mix until well incorporated (2-3 minutes).
  • Spoon half the batter into your 8X8 prepared pan and layer half the apple mixture on top. Spoon the remainder of the batter on top and top with the remainder of the apples.
  • Bake at 350*F for 1hr and 15 minutes, check batter around top apples to ensure the cake is done. Cool and drizzle with icing and finish with orange zest.

  • 2 tbsp water
  • 1 1/3 cup Kinnikinnick Icing Sugar or powdered sugar
